We had a friend over for homemade pizza last night (enjoying the sunshine in the garden- sigh 😔) and it was SUCH a delight to plan meals for entertaining again. Although my lawn is glad of the rain, I hope it's not too long till we have another sunny spell so my cravings for human contact are satisfied (albeit at a distance of 2 metres!). . . Homemade pizza is such a fun thing to do, and if you use a packet of bread mix like I did, really simple too. Just follow the packet instructions, shape into pizza bases, spread with passata and your choice of toppings (I chose chorizo, anchovy and loooots of cheese) and pop in a hot oven for 20 minutes. Summer salad season is upon us and I'm loving the opportunity to get out in the garden and eat dinner in the sun. Salads are such a great way to get a variety of veggies into one meal, and can be super frugal too. . . . Alongside the fresh ingredients, I used up some squash and peppers that I'd previously roasted, as well as some sundried tomatoes. Combined they gave a lovely smoky sweetness. Some stale bread was fried with a little garlic to make croutons, and then I sloshed in some cold pressed rapeseed oil and a dash of balsamic. Deeelicious.
